Hunan and Szechuan — Western regional cooking where hot peppers and Szechuan peppercorns are used to prepare entrees of mouth-tingling delight. Spicy entrees are printed with a flower mark. Diners with more delicate tastes may order a milder version of these entrees by mentioning it to your server in advance.
Mandarin — The selectric style of the northern capital of Beijing where for centuries the finest chefs throughout China were recruited to create entrees for the imperial banquetof the Mandarin. Mandarin entrees tend to be subtle and delicately flavored.
